
The lemon salad a very summery recipe that has been part of the life of many Manchegos and has passed from grandparents to parents and children.
Lemon salad turns out to be a typical dish of some villages in La Mancha, specifically in Villanueva de los Infantes, where my parents were born
I loved it when on Sunday my father woke me up early and we gathered the whole family around the table to eat the lemon salad, it was magical! It is important to eat it with a spoon making bread boats (me without gluten).
LEMON SALAD FOR 4 PERS.
Ingredients
3 lemons
3 garlic sprouts
2 young onions
Pinch of paprika
6 tablespoons of olive oil
1 glass of water
2 ice cubes
Pinch of salt
PREPARATION
Peel the lemons leaving as much white as possible
Squeeze them manually, leaving the pulp.
Cut them into small pieces and set aside.
Chop the onion and garlic sprouts into small pieces.
Mix the juice of the lemons, the oil, the salt and the paprika until you get a homogeneous mixture.
Add to the onion, garlic sprouts and cut lemons.
Add water and ice
Serve cold.
